Melon, Feta, & Radish Salad

Melon and cheese is a winning combination, be it watermelon and halloumi or the honeydew and feta here, the sweet juicy flesh juxtaposed against the cheese's saltiness provide a fresh tasting base from which to develop a dish.
This use of fresh fruit in savory dishes seems to be a secret that the rest of the world has known about for sometime, but with Britain venturing no further than Cheese & Pineapple on a stick. Fresh fruit in salads always makes you feel like your eating healthy, and this dish is no exception. While this salad uses the big Japanese radish Mooli/Daikon which are readily available in Tesco and the like, it will equally work with any other radishes to hand.

Serves: 4

You will need the following:

Salad:
1 Honeydew Melon, seeds removed and the flesh cut into cubes
Half a Cucumber, chopped down the middle and sliced
2 Spring Onions, sliced
Half a Mooli, peeled and sliced into ribbons using mandolin/grater
A handful of Radishes, sliced
A good handful of Chives finely sliced
1 bunch of Mint leaves, chopped
200g Feta
100g of Watercress, Rocket, and Spinach

Dressing:
Half a Lemon
2 Tablespoons of Red Wine Vinegar
1 Teaspoon of Honey
6 Tablespoons of Olive Oil (Or there about)
Salt & Pepper

Method:
1.  Put all the salad ingredients into a large bowl
2. Crumble over the Feta cheese
3. Prepare the dressing in a jug: squeeze in juice from half a lemon, and add vinegar with the honey. Add olive oil whilst whisking with a fork. Season.
4. Add the dressing to the salad bowl and mix up, leave for around 5-10 minutes.
5. Plate up with a grind of black pepper and serve
